Sometimes what's old news to me is VERY new to others. At my talk, the topic of kombucha came up, as it often does. It is usually a healthy choice after all. But not always. We spent some time discerning the difference between a well crafted kombucha (like Agapé Gardens's product below) and a mass produced kombucha like GT's, which is widely available across the continent.
But don't be fooled into thinking a LOCAL kombucha is always the probiotic splendour you think it is. There are many shortcuts being taken by local kombucha makers that does not provide a probiotic benefit to your microbiome. But Agapé Gardens knows the difference, and it is the only kombucha I recommend to anyone. Making it yourself is a great option too.

Kombucha is a raw, living, fermented beverage that originated over 2,000 years ago in Asia, and spread through Russia to Europe, and now North America. In fact, we learnt kombucha brewing from our grandmother (back when it was still the Soviet Union). She meticulously took care of the culture, attributing its beneficial properties to her own personal vibrant health. Growing up with kombucha in the household, it became a family tradition! Our children are huge fans of our kombucha and hopefully the next generation of artizen brewers.
Great alternative to Pop and Energy Drinks, Kombuch contains tea vinegar, b-vitamins, enzymes and acetic, gluconic and lactic acids.
Kombucha contains the following probiotic strains: Gluconacetobacter, Acetobacter, Lactobacillus, Zygosaccharomyces.
These compounds have been linked to aid digestion, maintain vibrant active lifestyle, gently cleanse and detoxify, support the immune system, fight off pathogens, maintain joint health, and cancer prevention.
Kombucha, overall, is a wonderful fermented beverage to add to daily diet. However, pregnant women, children, people with diabetes and various medical conditions - should always consult their doctor or practitioner before consumption.

How is it made?
We start off with a strong brew of organic teas and organic cane sugar to activate the culture's first fermentation process for 7 days or more, checking it regularly to make sure the process is going smoothly. Once fermented and all sugars have been broken down leaving only residual sweetness, we strain kombucha tea. Then each batch of strained kombucha gets a boost of natural sugar from organic juice or maple syrup that we add for flavour, as well as to activate natural carbonation.
We bottle Kombucha by hand in Original Canadian Stubbies. Their brown glass helps keep the sun away, and preserve beneficial qualities of kombucha. Once bottled, carbonation is activated through natural fermentation. Bubbles build up slowly. Our kombucha goes from flat to bubbly in a matter of a couple weeks. That is why we put the date bottled.
We love natural carbonation, because it can tell us how well kombucha has broken down sugars into the good stuff.

Why is some Kombucha carbonated and some flat?
I like the carbonation best.
Kate! GREAT question. In fact, ARTiZEN Kombucha is a live fermented beverage. The first 10 days it ferments in an open vat. Once it reaches desired fermented state, we strain the culture from the fermented tea. Then we go to step 2.
Step 2 is adding organic premium juice (or some sort of other flavouring like freshly grated ginger or cold brew coffee with a splash of maple syrup). The added sweetness from natural fruit or maple syrup, gives the probiotics a much needed boost.
Once bottle is capped, carbonation starts building up. Usually two days is enough for the fizz to come in.
The more kombucha sits in a bottle, the more carbonated it is. Always check the date bottled!
